Similar to a korma, but without the heavy cream - I gently roast aubergine, peppers and sweet potatoes and combine with my cashew sauce. Made from coconut milk, roasted cashews and a blend of aromatic spices.
Finished with a dash of lime, and served with a small portion of coriander rice and broccoli.
Suitable for freezing.
