
A personal favourite! Growing up, ordering crispy lemon chicken from my local Chinese takeaway was an absolute treat, so this draws from the nostalgia of my favourite comfort foods with a healthier twist.
Instead of deep-frying, I bake my crisp chicken thighs in a crispy, gluten-free oat crumb, with lemon and herbs, served on a bed of my egg fried rice, with stir fried vegetables and a Chef’s Garnish of light lemon dressing.
