Pan fried diced halloumi on a bed of tender spelt, tossed with roasted butternut squash, tender sumac roasted red onions, sundried tomatoes and tons of fresh herbs.
Finished with my Maple Mustard dressing.
Perfect for lunch or a light evening meal.
