Ten minute healthy dinner - quesadillas!
A simple and affordable recipe, these quesadillas require such minimal effort and a crowd-pleaser for adults and children alike.
Ingredients
4 tortillas wraps
2 tsp olive oil
1/2 onion, diced
1 tbsp garlic paste
1 tsp smoked paprika
1 tsp ground cumin
1 tbsp tomato puree
250g black beans, drained (can)
300g sweetcorn (canned/frozen)
200g spinach
3 tbsp grated cheddar / 1 mozzarella ball torn
To Garnish:
chopped coriander
lime wedges
chilli flakes
Directions
Heat 1 tsp olive oil in a saucepan, and sautee the onion for 3-4 minutes with a pinch of salt to soften.
Add the paprika and cumin, followed by the drained black beans and sweetcorn. Add 1 tbsp water and cook for a further 2 minutes.
Add the spinach, tomato paste and the grated cheese, and stir altogether to combine.
Add 1 tsp olive oil to a frying pan and get nice and hot.
Add the whole tortilla, and lay some of the filling in just one half of the tortilla.
Fold the tortilla over (in half) and press down with a spatula to seal the quesadilla.
After 2 minutes, flip over and cook for a further 2 minutes so that both sides are golden brown.
Keep going with all of your tortillas! Serve with garnish, and maybe a little dip!
