If you’re like me and have no time to feed a sourdough starter but would love to make some fresh breads at home – I have just the recipe for you. I used to use tortilla wraps as a light and healthy way to create my own pizzas at home, but recently I’ve been using a really simple flatbread recipe to make pizzas with instead.
The result is a lovely light and delicious pizza, that you can make entirely from scratch and takes just 30 minutes from start to finish. All you need is a few pantry staples - plain flour, butter, milk and salt.
You can use gluten free flour if required, and you can replace butter for olive oil if you prefer. Likewise, replace milk with a dairy-free alternative if you prefer.
I’ve included the recipe for my flatbreads below, and then some additional extras you can include if you wish. Further below are some ideas for tasty toppings too. A lovely recipe to make with little ones, especially if everybody prefers different toppings!

Ingredients
Pizza Base Recipe (makes around 4)
300g flour
175ml milk
50g butter (melted)
Big pinch of salt
Optional:1 tbsp oregano or fresh rosemary (finely chopped)
Season the flour with salt (and optional oregano or finely chopped fresh rosemary.)
Pour the milk/butter mixture into the flour and bring together with your hands.
Knead it a little with your knuckles and then cover the bowl with cling film and leave the dough to rest for 20 minutes.
While you wait, you can prepare your toppings and also turn on your oven as high as it will go, to preheat. (220C+)
Once the dough has rested, pull of a cricket ball sized piece and roll into a ball in your hands.
Lightly dust a work surface with flour, and roll out until it’s very thin.
Get a frying pan nice and hot and lightly oil, or spray with frylite.
Add the pizza base and leave for 3-4 mins until it starts to bubble from underneath.
Whilst it’s cooking, load it up with tomato sauce, cheese and any other toppings you desire.
Once it’s loaded, place the pan directly into the hot oven to finish, for about 5 minutes, until the dough is golden on the edges and the cheese is melted and delicious.
