Bright + Delicious Romesco

Chef Jen's Romesco Sauce
Beautiful and punchy - a real crowd pleaser.
I love to coat chicken or cod in this delicious Romesco, but you can also add it to fishcakes, tomato sauces or simply enjoy as a dip!
2 x garlic cloves
100g roasted peppers (jar)
1 tbsp lemon juice
30g almonds, blanched and lightly toasted
2 tbsp olive oil (extra virgin)
1 tsp smoked paprika
Simply blend everything together in a food processor until well combined. It should form a paste like sauce with textures from the almonds.
To use as a marinade, simply coat your meat or fish in the sauce and bake for 10-15 minutes!
