Bright orange, punchy and delicious - coat chicken or fish in this romesco sauce before baking and enjoy!
A great recipe to impress on a sunny day, that can be whipped up in 5 minutes!
I use this recipe quite a lot in my A La Carte menus, have you tried one yet?
Ingredients
2 x garlic cloves
100g roasted peppers (jar)
1 tbsp lemon juice
30g almonds, blanched and lightly toasted
2 tbsp olive oil (extra virgin)
1 tsp smoked paprika
Directions
Simply blend everything together in a food processor until well combined. It should form a paste like sauce with textures from the almonds.
To use as a marinade, simply coat your meat or fish in the sauce and bake for 10-15 minutes!
