My deliciously light Jerk Chicken bowl is full of flavour - with a little dipping pot of coconut sauce, rice and beans and a new pot of cabbage + pineapple slaw.
The chicken thigh are marinaded in my own blend of Jerk spices then pan seared and baked to finish - keeping them juicy and tender!
Served on a bed of coconut rice with fresh chilli, sweetcorn, kidney beans and lime.
Medium heat, and a little sweet.
Suitable for freezing.
