This one is a real treat! I’d go as far as to describe it as a Winter Warmer - and I love how much flavour is packed into this dish, despite being so light and healthy!
My chicken thighs are first marinated overnight in a blend of honey, mustard, thyme + lemon before being grilled and served with my roasted carrots, parsnips, butternut squash, red onions and cavolo nero.
Enjoy with a small portion of roasted potatoes and my fresh chicken jus.
