Since trialling a fajita chicken kit last year, I've been trying to figure out the best way to make chicken fajitas travel well (without tons of packaging!)
I settled on this delicious chicken fajita bowl, and I couldn't be happier!
It's a little higher calorie than most of my dishes, because of the added homemade nachos and guacamole that come alongside this dish.
Fear not, these are baked not fried and seasoned lightly - they add the perfect crunch to this dish - or save them for a healthy snack when you're peckish!
